Stephan Zuber, formerly chef at Uma and Anna Plagens, a pastry chef who learned her craft from the French patisserie-master Pierre Hermé are behind the concept. The mission of both is to make professional confectionery, éclairs, pains aux chocolat, airy croissants and delicious tartlets.
